Berkshire's 'best young chef' cooks at Michelin star restaurant





Nineteen-year-old Bradley Montague-Fowley was invited to spend the day at the renowned L’Ortolan restaurant in Shinfield – the same place he celebrated his birthday earlier this year.
The invitation came weeks after he was awarded the title of ‘Berkshire’s Best Young Chef’.
As reported by the Newbury Weekly News, he was awarded the accolade after he impressed judges, including celebrity chef Tom Kerridge, with a dish consisting of roast pork loin with a beetroot purée, roasted butternut squash, roast garlic puree, wild mushrooms and a port-and-blackberry sauce.
During his day at L’Ortolan, the former St Bartholomew’s School pupil helped the chefs with mise en place – or “putting in place” – under the guidance of sous chef Marcin Biernacki and was tasked with chopping onions and shaping the beetroot spheres for the venison main course.
Mr Montague-Fowley also had the opportunity to join executive chef Alan Murchison on the pass during service, plating up and garnishing dishes before they were sent out to guests.
The young chef, who previously worked part-time at the Lock Stock and Barrel in Newbury before completing an apprenticeship as a pastry chef at the London Hilton on Park Lane, said: “It was a great experience and I loved getting stuck in.
“I’ve been out of the kitchen for a little bit and it was good to be back in the thick of it and under pressure. It was quite busy, particularly in the evening.”
Mr Montague-Fowley already has his next venture lined up – cooking breakfast, afternoon tea and four-course meals, six days a week for six months, at a ski resort in Val d’Isère, France.
